Recipe: Baked Chicken with Garlic, Shallots and Onion

This is a very easy recipe for novice cooks and will absolutely amaze your friends and guests. Plus, it makes your whole house smell wonderful! Pair this with a twice baked potato or green beans (or your favorite side) and toasted garlic bread for a perfect meal. Degree of Difficulty: Medium

Hardware:

  • Medium-sized Cast Iron Frying Pan
  • Aluminum Foil
  • Cutting Board and Knife for veggies
  • Tongs for handling Chicken

Ingredients:

  • 4 Chicken Thighs
  • 3/4 Cup Olive Oil
  • 8 Cloves of Garlic, peeled
  • 8-10 Shallots, peeled and split from stem to root
  • 1/2 Medium Yellow Onion, peeled and sliced coarse
  • Basil, fresh or dried
  • Thyme, fresh or dried
  • Salt and Pepper

Directions:

  1. Preheat the Oven to 350
  2. Lightly coat Chicken with 1 to 2 tablespoons of Olive Oil
  3. Season Chicken liberally with Salt and Pepper and brown on both sides in a cast iron frying pan starting with skin side down
  4. Prepare Garlic, Shallots and Onions while sauteing the Chicken
  5. Once Chicken is brown on both sides, add remaining Olive Oil to pan and remove from heat
  6. Arrange Garlic, Shallots and Onions liberally around the pan and season with Basil, Thyme, Salt and freshly ground Pepper
  7. Cover tightly with Aluminum Foil and bake at 350 degrees for 1 1/2 hours
  8. Remove from oven and allow to rest for 3 to 5 minutes before removing foil
